Coincidentally, it's Hispanic Heritage Month right now, so the timing is perfect to try something that holds such significance for Mexico.

How to make flautas de pollo

If you have to name one Mexican food, chances are you will be naming tacos in a heartbeat. Tacos are a pillar in Mexican cuisine: they are easy to do and you can do it with pretty much anything you have in your kitchen; just put your ingredients in a tortilla and you are ready to go. Fortunately, tacos being so simple to make also means you can make some slight variations and end up with something a little more brave.

One of these variants are flautas. They are elongated tortillas filled with meat or vegetables, that are then fried in oil to make them crispy and golden. They are popular because they can be as a side snack or as a main course. You can also top them with any kind of toppings, like lettuce, sour cream, avocado, tomato, or salsa, making flautas very versatile, like pretty much any other Mexican food.

As we mentioned before, they can be stuffed with pretty much any filling, but chicken is to flautas what apples are to pies; the classic, timeless complement that will be the highlight of your next big dinner.

Ingredients for our Flautas de pollo

In order to make flautas for 4 people, you’ll need:

  • 1 pre-cooked cooked chicken breast (a rotisserie chicken is great!)
  • 20 Tortillas
  • Oil
  • 1/2 Lettuce
  • 3 tomatoes
  • 3 serrano chiles
  • 1/2 Onion
  • 1 Avocado
  • Cilantro
  • Fresh cheese
  • Cream
  • Salt

Chicken flautas preparation

  • Shred the chicken breast into small pieces.
  • Crumble the cheese and the cilantro and chop the tomato, onion and lettuce into slices.
  • Heat your tortillas in a clean pan. Take your tortilla and then put enough chicken in the middle of the tortilla and roll it.

  • Heat enough oil in a frying pan to fry the flautas. Once the oil is hot, put the rolled tortillas in the frying pan and fry them until they are golden brown. Once they are ready, put them in a plate with absorbent paper to eliminate the excess.
  • To serve, put 5 fried flautas on a plate. Put the lettuce, tomato, onion, avocado, cream, cheese, a little cilantro and sauce on top of them.

  • Now your flautas are ready to eat! However, here at Clay Imports we like to give an extra, so we are going to teach you also how to make salsa for chicken flautas.

    • Boil the tomatoes and chiles for about 12 to 15 or until they are tender. Let them cool for 5 minutes.
    • Put them on the blender with a few sprigs of washed cilantro and a pinch of salt.
    • Blend everything and reserve.

    You can skip the chiles from the mix if you feel they are too spicy. Also, you can add water if you want a more watery salsa, making flautas ahogadas. You can experiment with ingredients, servings and toppings until you find the perfect mix for you. Keep in mind that in Mexican cuisine, the perfect touch for all your foods is the one you add!
